Zucchini Relish
from Good Mousekeeping
cider vinegar
sugar
pepper
salt
zucchini
In pan, heat up 1/2 cup vinegar, 1/4 cup sugar, pinch of pepper, and a pinch of salt. Let boil and stir in 1 lb chopped zucchini. Simmer about 10 minutes and serve cold.
