Correction to my previous post: for the spinach patties I add a tablespoon of oil to the mashed potatos.

Pumpkin soup
2kilo pumpkin cut into cubes (about 4 lbs)
Water to cover
3 onions chopped
oil for frying
4 teaspoons minced ginger or 1 tsp ginger powder
1/2 teaspoon garlic powder or 2 cloves minced
1 tsp salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

In a big soup pot boil the pumpkin with the water for about 1 hour until soft. In a separate frying pan, fry onion, ginger, and garlic until onions are translucent. Add to the pumpkin in soup pot. Simmer for 20 minutes. Mash with an immersion blender. Add salt, cinnamon and nutmeg.

You can garnish with pumpkin seeds but I don't like them. Instead I'm going to try cinnamon croutons.

Whip up the whip. Add rest of ingredients. Pour over frozen strawberry mixture and freeze.

thank you for this delicious recipe! I just finished making tilapia in this sauce. It smelled so good, I really wanted to eat it then and there.... but I'm saving it for yom tov!

this is my rought menu. Only first night is for sure, the rest of the meals I will figure out as I go along. A lot depends on leftovers etc.

1st night
Challot

Gefilta fish
Salad with pomegranate seeds and mandarin
Israeli salad
Chummous

Meat roast
Turkey rolls
Persian rice
Butternut Squash pie
tzimmis

Apple cake and honey cake
Raspberry ice cream



1st day
Challot
Carrot soup
Lamb
Sticky toffee pudding

2nd night
New fruits
Challa
Sesame chicken



2nd day
Fish
moussaka

Friday night
Chicken soup
Matza balls?
Meat course to be decided. Either leftovers or meat roast.

Shabbos day
Fried gefilta fish
Salmon
Salads

This is the food I cooked for four meals:

Challah
Creamy Broccoli Kugel
Potato Zucchini Kugel
Brown and wild dill rice
Roasted Cauliflower
Green beans with caramelized onions
Peanut butter sesame noodles
Shepherd's pie
Chicken Tagine
Oven baked Shnitzel with spicy sauce
Chicken pot pie (made by a neighbor that's coming for a meal)
Peanut butter cheesecake
Plain cheesecake

The above food is going to be divided among the 4 meals. I doubled the amount of green beans, cauliflower, rice, and noodles, so they'll probably be served at two meals each.

I'll serve chummus, schug, corn salad, guacamole, and some type of lettuce salad at the meals.

I have no clue what we'll eat at any given meal but I made:

Challah

Apples & Honey
Pomegrante
Fish head
star fruit (shechyeanu)

Fish Cookies (fried gefilte fish)
home made tomato sauce
cruditee
regular green salad
beet salad w/oranges
pasta salad of some sort that can be made on yom tov (or couscous)
hard boiled eggs

chicken soup with chicken dumplings
fine lokshen for the soup

meat balls
turkey breast roast
red meat roas (haven't made it yet)
apricot/soy chicken
baked sweet potato
baked apples stuffed with wild rice, quinoa, & mushrooms
green beans
stewed leeks

banana chocolate chip cake
peach kuchen
apple cake (if I have time)
chocolate cake (if I have time)

I also have cleaned raw chicken cutlets that I can cook quickly if I need to.

Here is my menu:

Homemade challa
Honey cake } these are at all meals
caramelized upside down apple cake

1st nite- out

1st day (4 adults, 3 kids) lunch:
sweet potato/cranberry/ pomegrante tropical salad
honey mustard onion chicken
corn kugel
roasted cauliflower
rice
roasted potatoes

2nd nite- out

2nd day (9 adults, 5 kids) lunch:
Egg Salad
Chummus
Apple/ Cranberry/ Almond salad
Soda Meatballs
Pomegrante Chicken
Carrot Kugel
Apple/ Cran Kugel
Rice
Potatoes

Simanim (no one else in town does these, only DH so we are making and bringing with us):
Jellyfish head (I am a crazy vegetarian!)
Deep fried black eyed peas
Fresh dates
Pumpkin tartlets
Leek Patties (someone else mentioned these too- last year I just made a potato latke and added leeks- this year I saw a terrific recipe in the Jewish press!)
Beets (I dislike these altogether- DH only eats them roasted, so we'll be roasting them)
Pomegrantes

Rest of meals- out! (We did a round robin meal rotation with 2 other families and each hosted a meal, plus we got invited out randomly)

1st night
*simanim (from mil)
*baked gefilte fish in tomatoe sauce
chumus, tchina, colslaw
*chicken soup w/ kneidlach and lukshen (but we might akip it this meal)
*chicken and potatoes in a pot
baked meat patties
onion kugel

1st day
*potatoe burekas w/ mushroom sauce
*spagetti 'n meatballs

2nd night - guests (two families each one is bringing stugh I endded up barly cooking for this meal)
*simanim (some from my mil some from guests)
*salmon (one family is bringing)
chumus tchina, colslaw, lettuce salad w/ pmegrant seeds
*chicken soup w/kneidlach and lukshen
*some kind of meat (the other family is bringing)
honey rosted baked potatoes
rice
onion kugel
*desert is apple cake plus somthing one of the guests are bringing

2nd day
*veggy soup
*honey mustered shnitzel
leftovers

leil shabbos
*baked gefilte fish in tomatoe sauce
chumus, tchina, colslaw
*chicken or vegtable soup
*leftovers

shabbos day
*egg salad
lukshen kugel
veggy salad
*leftovers that are dry

shalos seudos
tuna and cream cheese sandwiches with lots of veggies.

I might make another side dish during yt if I see I need it (probably ferfle maybe mashed potatoes)

Friday lunch (having company, although not the same as Wed night so I get to reuse the menu unless we decide to make something fresh after shul):
Challah in honey
gefilte fish
ceaser salad (notice the pattern here? DH will not touch any other type of vegetable salad)

apple kugel muffins
potato kugel
butternut squash cubies
hot pastrami
sweet and pungent chicken
stuffed cabage
waldorf salad (aka let us have a raise in salary salad)

Lunch:
Salad (salad, cucumber, tomato, endive...)
Chicken curry with lemon and rice
Chocolate cake

Shabbes:

Gefilte fish
Emincé of veal, lemon and rice
Chocolate cake

Kneidlech
Chulent
People will take whatever they want as dessert Wink

How could I have forgotten to post here?

Water challos, oatmeal challah, and challah with sauteed onions

Boiled gefilte fish rolls, steamed whitefish with onions

apple salad, purple cabbage salad, beet and corn salad

Stuffed cabbage, brisket, baked chicken with apples, and the Imamother stuffed cutlets

Yerushalmi kugel, squash kugel, baked pineapple

Margarita pie, peanut butter ice cream pie, chocolate mousse pie, and apple honeycake

I wanted to post, but was too busy before yom tov B"h Smile

First Night:

gefilta fish & salmon with Tropical Seasame teriyaki sauce
chicken soup
chicken with corn flake crumbs (plain simply baked)
pot kugel
orzo & cold cuts (from ra_mom)

2nd night:

gefilta fish
chicken soup
meat (silver tip)
Chicken wellington
onion kugel

Both days I ate out and shabbos was the regular traditional meals.

by the way.... for those that made the sushi salad - or plan on it -
b4 I cut up the mock-crab sticks - I looked at the ingredients and saw that it was made from fish -
I DID not add it to the salad bc I was serving it DURING a meat meal.
the next time I make it - I will serve it along with the appitizers.

First night

Ceasar salad
Fresh Salad
Avocado/ heart so palm/ cherry tomato
chatsilim
chumus

Baked Salmon with mayo

Soup (didnt decide yet)

baked Chicken
tzimmes
quiche of some sort:prob. sweet potato pie

Dessert:
chocolate bark
3 layers ice-cream (or maybe just 2)
apple cake

Variations for the days:
Sushi instead of salmon
spring mix salad with strawberries and mango
spaghetti sesame salad
eggboats
Almond and pear pie (really yum!)
