Fresh pesto would be great smeared on ready slow cooked chicken though. |

Tuesday: baked parsley chicken and potatoes, tossed salad (ranch)
Wednesday: creamy tomato rice soup, vegetable calzones, onion rings
Thursday: macaroni and cheese (just me and the kids, dh in school)

Monday: Hamburgers, potato salad, green beans
Tuesday: flounder, mushroom quiche, fresh salad
Wenesday: going out with DH
Thursday: grilled chinese style chicken, and veg. lo-mein
Did you guys ever try Gefens newish product-lo-mein noodles? They're found in the freezer section and really yummy! I use the recipie on the pkg.

"Surf and turf" means seafood (that's surf) and chickenn (or meat, that's "turf"). Each person gets to choose one.

Hmm, I actually made a menu this week.
Sunday: Mushroom, sundried tomato pasta YUM
Monday: , olive and lemon chicken, couscous, spinach and tomato salad
Tuesday: burger, Spicy French Fries, Salad
Wednesday: Spaghetti Bolognaise, Spinach Salad
Thursday: Cajun Hake, Salad, and Roasted Veg.

I can't help with the Indian because it is a marinade that I bought at the supermarket that you mix with coconut milk but here is the tagine recipe.
Moroccan Tagine
Ingredients:
1 tablespoon olive oil
2 skinless, boneless chicken breast halves - cut into chunks
1/2 onion, chopped
3 cloves garlic, minced
1 small butternut squash, peeled and chopped
1 (15.5 ounce) can garbanzo beans, drained and rinsed
½ pepper chopped
1 carrot, peeled and chopped
1 (14.5 ounce) can diced tomatoes with juice
1 (14 ounce) can vegetable broth (or water and some soup mix, add last to see how much water to add)
1 tablespoon sugar
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon ground coriander
1 dash pepper
1 dash chili peppers
Cinnamon
Cumin
Turmeric
Instructions:
Heat the olive oil in a large skillet over medium heat, and cook the chicken, onion, and garlic about 15 minutes, until browned.
Mix the squash, garbanzo beans, carrot, tomatoes with juice, broth, sugar, and lemon juice into the skillet. Season with salt, coriander, and cayenne pepper and other spices (I just put a little of each in). Bring the mixture to a boil, and continue cooking 30 minutes, until vegetables are tender.
Serve over couscous. DELICOUS!!!!!!!!!!!
