Here's OldYoung's awesome recipe for mock potato soup.

And I am using this recipe for the chicken breast cutlets, arranging the breaded chicken on a cookie sheet, and baking uncovered at 375 for 20-25 minutes.

I do mine the really simple way.
make mashed potatoes from the box. (I just use water, salt, and a teeny bit of margarine. if you want to make it hte proper way, you need soy milk and lots of margarine)
place half of the mashed potatoes on the bottom of a pan (I do it in individual little pyrex dishes)

sautee ground beef with some BBQ sauce in a pan. spread on top of the potatoes. top with frozen mixed veggies, and cover with the remaining masehd potatoes.

bake at 350ish for at least 15 minutes, longer if needed- and if you want it crispy on top, spray with Pam and broil for a minute.

I used to make a double batch of chicken soup and freeze half for the following Shabbat, but decided I like it fresh better. So I've been experimenting with soups.

Sunday -- Thai Chicken Coconut Soup. Took leftover chicken broth, carrots and chicken, and added some lemongrass stalks, a can of coconut milk, a cube of frozen ginger, a few cubes of frozen garlic, some salt and pepper, sliced bok choy and a few drops of hot sauce. It was sooooo good! DH and I love Thai food (we went to Thailand for our honeymoon, pre-teshuva), and I hadn't eaten this soup for years.

Monday -- Lemon Garlic Tilapia with Egg Noodles, plus cherry tomatoes and corn.

Tuesday -- Chicken Stir-Fry with lots of veggies, inc. what's left of the bok choy, dried mushrooms, onion, carrot, frozen peas and whatever else I feel like throwing in. On top of tofu-based Chinese noodles.

Wednesday -- Something parve, maybe a pashtida.

Thursday -- I don't care by Thursday!
