I heard of a method, where u first cook a ton of veggies. Then remove the Veggies from the broth and add the chicken/bones? Supposed to be very flavorful. Can any confirm if I heard right from a big chef

I do the opposite. First cook chicken, Turkey and/or. Turkey/chicken bones. Fill the entire pot with the poultry and cover with water. There isn’t more water than poultry. I also add a whole onion and some root veggies that I I know I’m gonna throw it out.
Once that cooks for 2 or so
Hours I take out the bags and have a half pot of clear broth. I add the veggies and cook just until the way I like to eat it. The carrots and soft but not mushy and they’re still super sweet. We love it this way because we enjoy all the flavorful veggies.

What's the point of going through such a process? I think my chicken soup is quite flavorful cooking everything together.
