You can also freeze the fried and breaded eggplant slices. When you want to serve it you can assemble it with the sauce and cheese and bake.

If you freeze the slices, do you separate them so that they don't stick together, or just separate them after defrosting?

Actually, my mother does this, so I don't know offhand. I know for a lot of things in general my mother would freeze them on trays until solid and then pack it in a box or bag. Wax paper or parchment between layers wouldn't be a bad idea.

You may need to reheat it uncovered for a bit longer so that the ice/water from freezing can evaporate.
