Recipe for fire roasted eggplant dip?

Anyone have a really good recipe for fire roasted eggplant dip?

Wrap an eggplant in silver foil, roast over a flame for about 45 min to an hour, keep turning it to make sure all sides get soft.
Once cooled, slice open and scoop out flesh, you can add in bit from the skin too.
Blend with 3/4 cup mayo and 3-5 garlic cloves(depends how garlicky you like it!)
Blend for couple minutes till smooth.
You can double or triple as needed.

If you want a mayo free recipe:
Scoop out flesh, mix with a fork and add oil, crushed garlic and salt.
I love making both and serve it together.

Thanks! which way comes out better?

also, can I use frozen garlic cubes or is it better if I use real garlic cloves?

I do the mayo free version with crushed garlic, salt and olive oil. The key to super flavorful is roasting the eggplant as long as possible without is burning and using a lot of fresh garlic. Really brings out the flavor.

Any, I made it with both and really liked both ways.
