Baked Donuts

Try these delicious baked donuts, for an almost guilt-free Chanuka alternative. Each donut contains only 1 teaspoon of oil. For Pareve donuts, use soy yogurt and soy milk, or coconut yogurt and rice milk.

1/2 cup + 1 1/2 tablespoons milk or Pareve alternative, divided
1/2 cup vanilla yogurt or Pareve alternative
1/4 cup canola oil
2 eggs, lightly beaten
3 teaspoons pure vanilla extract, divided
7/8 cup sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 pinch nutmeg
1 cup confectioners sugar
1 tablespoon cocoa
colored sprinkles

Preheat the oven to 325 degrees. Very lightly grease 2 non-stick donut pans. Do not over-grease.
In a large bowl, whisk together 1/2 cup milk, yogurt, oil, eggs, and 2 teaspoons vanilla. Add the sugar and whisk until smooth. Measure out the flour carefully with a spoon. Do not pack down into the measuring cup. Add the flour, sugar, baking powder, salt, and nutmeg right into the liquids, and stir until just combined. Do not over-mix, or donuts will have a bit of a tough texture.
Use a pastry bag or small spoon to neatly fill each doughnut cup about 3/4 full, making sure the center rise is kept clean.
Bake uncovered for 12 minutes, until donuts spring back when touched.
Allow donuts to cool for a few minutes, before removing them from the pans.
In the meantime, prepare the glaze; in a medium bowl, whisk together the confectioners sugar and cocoa.
Slowly add the remaining 1 teaspoon vanilla and 1 1/2 tablespoons milk, continously mixing as the liquids are bein added, to make smooth pourable glaze.
Working quickly while glaze is still wet, dip one side of each donut into the glaze. If the glaze turns thick, you may need to use a mini rubber spatula or your fingers to gently help the glaze around the donut neatly.
Arrange the donuts on a clean baking sheet to dry, and then quickly sprinkle with colored sprinkles.
Allow glaze to set. Serve once donuts have completely cooled.

Yield: 1 dozen donuts

Special Equipment Needed: non-stick donut pans (a worthwhile $15 investment)

I'm sure. You might have to readjust the baking time.
I would also suggest you cut the pastry in half after baked, and place an extra layer of glaze in between, besides for glazing the top, because there won't be as much surface space on top as with a donut, and these need a good helping of the yummy glaze.

I saw those yogurts but noone could tell me anything about the hechsher. can you? pls? (ds is dairy free)

I don't have a container on hand. But I can find out for you.

Wildwood also makes soy yogurt and has an OU, but IIRC Whole Soy Co tastes a bit better.

I know the hechsher-k-orc- but I dont know if its a good one. is there another rav that you know holds of that hechsher?

Just want to clarify that 7/8th of a cup sugar means = 1 cup minus 2 Tbsp, or = 3/4 cup plus 2 Tbsp.

Not 7 cups Sad

Yes, I think the recipes used for donut makers are similar to those used with donut pans.
Adjust baking time according to donut maker instructions.

Made it pareve-with soy milk, tofutti sour cream, and mayo--I ran out of sour cream. came out good but tastes like pancakes! would be a great substitute for pancake batter

I made 48 of these last night using soy vanilla yogurt and plain soy milk, as directed. The donut pans made perfect out of the box like donuts. They were polished off. We got rave reviews.

I forgot to add that I made them as muffins because I didn't have a donut pan.
I guess next time I have to make it dairy! but they were still good

Just made the donuts tonight. It is amazing and so easy! Thank you so much for posting. I made some in a mini doughnut pan (18 on the tray) and some in a muffin tin. We had fun decorating them with sprinkles, sugared nuts, dazzled with contrasting colored chocolate.
Honestly, whenever you post a recipe I know it will be good.

I do not bake often, so I was not sure and put in less than 1/4C and it still came out good.
