My grandmother used to soak challa, then squeeze out the water, added lots of petrishke, and garlic, salt, eggs, and spices.

Suate an onion add green and red peppers (diced) add challah crums
Mix it all tog. turn off oven and add an egg to help keep it tog.

Here's a great one:
In a large bowl, mix:
about 1/2 cup of oil
1 cup water (can add more later, if needed)
Spices: salt, pepper, garlic powder, 1 tsp. basil, 1 tsp. parsley
1 onion chopped
2 stalks celery chopped
1 apple cubed
I add sliced mushrooms sometimes
add: 1 challah, cubed
Mix well, add more water if too dry.
Place stuffing in chicken cavaty, and also underneath the skin.
Smear some olive oil on outside of chicken.
Bake covered for 1.5 hours, and uncovered for another 1/2 hour.
Baste occasionaly.
Check for donenes, may need more time in the oven (maybe an extra 1/2 hour) depends on the size of the chicken.
