Saute onion cut in chunks, add butternut cut in chunks, and some carrots as well if you want. Pour in water to almost cover veg, spice with salt, black pepper, and curry powder. Cook till veg are soft, blend.
Yum!

I make this recipe but without the cream. EVERYONE in the house LOVES it.
I've made it with both pumpkin and butternut squash.

I got crazy when I spiced mine:
cardamon, white pepper, ginger, cinnamon, salt
otherwise it was the same as yOungM0mmy's. squash, carrot, onion, garlic.
I've also added lentils & split peas with mixed results (dh didn't like but everyone else did).

Thanks, Young mommy, that looks good. I should try that next time.
I made one from Spice and Spirit, and I don't know if it turned out right. (It seems to ask for so little water for so many vegetables that my soup seems to be lacking liquid.)
I look forward to trying your recipe.
