I make pepper steak in the crockpot and I think it tastes delicious.
Also, a whole chicken (skin on) with spices rubbed on top (paprika, garlic, pink salt, Italian seasoning mixture) on high for 4 hours. Gets super soft, it's delicious.
You can make a pastrami roast in there too, but that's more for Shabbos/Yom Tov.
I think the trick is not to let anything go for longer than 6-8 hours. After that it gets that overcooked cholenty taste.

I slice onions and potatoes/sweet potatoes then chicken on top, spice it pour a little bit of sauce of your choosing I like duck sauce (it doesnt need a lot chicken creates its own juices) its yum and doesnt taste like chulent. Put it on low for a few hours. It doesn’t need 7 hours, but that’s how long I usually have it up for cause that’s how long I’m out of the house

I make chicken legs in the crock pot. Honestly, it's super versatile and useful. Put it in in the morning, come back home to a fully cooked meal.
I've also made ribs in it, and they were delicious.
