I make pepper steak in the crockpot and I think it tastes delicious.
Also, a whole chicken (skin on) with spices rubbed on top (paprika, garlic, pink salt, Italian seasoning mixture) on high for 4 hours. Gets super soft, it's delicious.
You can make a pastrami roast in there too, but that's more for Shabbos/Yom Tov.
I think the trick is not to let anything go for longer than 6-8 hours. After that it gets that overcooked cholenty taste.

I slice onions and potatoes/sweet potatoes then chicken on top, spice it pour a little bit of sauce of your choosing I like duck sauce (it doesnt need a lot chicken creates its own juices) its yum and doesnt taste like chulent. Put it on low for a few hours. It doesn’t need 7 hours, but that’s how long I usually have it up for cause that’s how long I’m out of the house

I make chicken legs in the crock pot. Honestly, it's super versatile and useful. Put it in in the morning, come back home to a fully cooked meal.
I've also made ribs in it, and they were delicious.

I made goulash for tonight in my crockpot, was yum and totally different to cholent.
Fry an onion till translucent, then brown the meat. Sprinkle generously with paprika, garlic powder, onion powder and salt and pour into crock pot with some water (chicken soup if you have for extra flavor, but water works well too). Peel and cut potatoes and carrots (and any other veggies you want), add to crockpot, give it all a big stir and leave on high for a few hours, then turn to low.
Enjoy!
