I've never had success with homemade pita. Used a decent recipe online with good reviews and followed the directions but they either puffed partially or not at all. What am I doing wrong?
I tried one in a pan on the stovetop but that was an utter fail. The rest I baked on a preheated baking sheet in a 475 oven, and those were better but still meh.
Help please!

Hi!
Kudos for trying! Pitas are tough.
I failed and failed and eventually got better.
Some tips that I picked up:
- Dough rises better when it's very smooth. Try to avoid bumps and scratches (so to say), especially on the edges.
- Make sure your pan is super hot before putting the pita on it. I let mine preheat in the oven at 450° and then slide the dough in. I pull out the oven rack and carefully flip it over from flat pan.
- use center rack and leave plenty space. 2, 3 pitas at once only.

I have a different pita problem. Every time I've tried to make pitas, it sets off my smoke alarm. What am I doing wrong?

I believe you need a heavy preheated pot/ skillet, such as a Dutch oven.
Worked well for me on the first try, BH.

Do you have an oven thermometer? Is it possible that your oven temp is off?
