There are lots of lots of reasons, one of the basic reasons is that unlike purim, Hanukkah is not a physical victory. It's a spiritual one. That's why we say hallel

I don't know, but I'm glad it doesn't. Don't we have enough mandatory seudot?
We are supposed to eat some fried foods -- I'm glad there is not a seudat mitzvah consisting of all fried foods!

Maybe you have little kids but with big ones chanuka seems to be a festival of eating to me. Late start. No minyan. Breakfast at home. Big full family dinners nightly. Actually feels like a week of chol hamoed without the trips

No, my children are big. Most of us are on our regular schedule. My youngest was in school till yesterday. I do cook most days but not so different to regular weeknights. I hosted for Shabbos and made a big party one night and was invited out another two nights. There is work and effort involved, but it is all totally by choice. I don't feel pressured at all.

Actually, I don't think there's a mandatory meal on Purim. It's a mitzvah to drink wine on Purim. If you forgot to say al hanisim when you bench after the Purim seuda, you wouldn't bench again because there is no chiyuv seuda. So I'm not sure that the premise of the question is correct.

The mishteh is mandatory, one of the four mitzvos of the day.
One of the reasons Chanukah is 8 days long is because in ancient times, it was very closely connected to Sukkot, on Sukkot we do have chiyuv seudah. Hm that’s a good question OP, I’ll have to ask my dh.

IMHO you are wrong. Seuda is mandatory together with matanot le evionim and hearing Megillah reading.
