I don’t know what you mean by authentic but it’s definitely delicious.
3 big overripe tomatoes
1 onion minced
Pepper
Parsley bunch chopped fine
1/2 jalapeño
Minced garlic
Salt
Pepper
Paprika
2T Tom paste
Olive oil- lots
Sauté onion in olive oil till brown, add peppers herbs garlic and lastly tomatoes.
Season
Cook on low until no more juice and mixture thickens
Add more spices and olive oil to taste

Morrocan matbucha sooo delicious
4/5 big circle tomatoes
Blanch in boiling water for 1 minute, remove tomato skins
1 or 2 jalapeño chopped finely with seeds (depending on how spicy you like it)
6-8 garlic cloves
1/4 cup oil
Simmer for 1.5-2 hours in a frying pan without the lid. Every 20 minutes or so, mash it with a mashed potato masher. Preferably the ones with the circles on the bottom
After about 2 hours, add 1-4 cup more oil , 2-3 tbs sweet paprika , some sugar and salt to taste.
Some people add red bell peppers but I don’t
This recipe makes 2-3 portions. I use one and freeze the rest. Serve this matchucha warm ,
I don’t like onions in matbucha and tomato paste makes it ketchupy so I don’t put.

we have several posted here over the years. do a search. one is with fresh tomatoes, I think that's mine, and one with canned tomatoes.
