I feel like I've run out of options except for junk like hot dogs for dinner. I need healthy or just healthyish dinner ideas for an extremely picky family that will fit a very tight budget. We keep cholov yisrael so that makes dairy not too cheap either. Here's a list of forbidden foods off the top of my head though im sure there are plenty more im forgetting:
Anything exotic
Any kind of fish
chicken bottoms
cooked vegetables (except finely chopped in a soup that could work or not its a gamble)
broccoli-in any shape or form
cauliflower-in any shape or form
oatmeal
farina
Allowed veggies: (Fruits are all forbidden-even blended)
Cucumbers
gherkins
olives
corn

Spaghetti and meatballs
Home made chicken nuggets (cut cutlets into small pieces, bread and bake) with whatever starch your family likes (in my house it’s couscous. )
Make your own taco/taco bowl bar. We’ve done it milchig or fleshig- prepare bowls of rice, beans (some kids like plain and some like the canned vegetarian beans here), cut tomatoes, avocodo, canned corn etc, and either taco meat or cheese. Put out wraps or taco shells or just chips to crumble on top. Your picky eater may just eat rice and cheese and tomatoes, but that’s a balanced dinner too.
Scrambled eggs with assorted breads and cheeses and cut veggies- make your own sandwich.
