I just finished cooking my pickled tongue and its brownish, not the usual pinkish color. Can I assume it's fresh/good? TIA

Maybe they mislabeled it and it's not pickled? Taste the cooking water to see if it's salted from the meat.

Thanks. I guess they mislabeled it. I cooked it like a pickled tongue. the taste is blah.. how can I save it?

Add salt, fresh garlic, bay leaves to the cooking water and let the tongue cool in there.
Chill it and once fully cold, slice it.
Then make a delicious sauce to pour over the slices. You can pour some cooking liquid on the bottom of the pan and pour a nice saucy glaze on top, to warm before meal.
