Seriously considering buying a kayak. Does anyone have and can recommend what to buy?

No but I want one too!
The biggest issue is that they are very heavy. I'd probably need to go with an inflatable although they have downsides because otherwise I'd need help to launch and put on the car, and that defeats the purpose. It needs to be easy to use.
But if I lived next to a lake... I'll stop dreaming.
I did calculate how often I'm likely to use one and realized that paying to rent a kayak would end up being easier (no shlepping or storage) and buying my own would not pay off for a lot of years. If you're a more frequent kayaker than me your results would probably be different.

I live close to Lake, and my husband would shlep w me. I'd use once a month? More in summer? My close lake doesn't have rentals

We have a bunch of kayaks.
They are heavy. But you can buy wheels and attach with ratchets. My daughters can take themselves.
We just bought cheap ones and got free from ppl giving away.
You can get life jackets cheap at Walmart.
I attached a whistle to each life jacket bec my kids go all the time.
