I hear the cooking more evenly part but I don’t think my palette discriminates between thick or thin

Cooks more evenly, less chewy, and it’s the only way I’ll eat it. I hate thick pieces it just doesn’t taste good.

There’s more crunch to chicken ratio in every bite. Maybe people like that.

Less chances of cartilage in the cutlet.
Cooks more evenly.
I can fry on high heat and they're ready faster.

I find thicker schnitzel juicier, so I prefer thicker. Thinner slices tend to be overwhelmed by the breading so I don't get to enjoy the actual chicken part.

Thin tastes different than thick. Thick has a very chicken-y taste that makes me gag.

That’s the secret. When I’m rushing I cut them thin or treat myself and pay more for thin cut. When I want them really good I pound them to an even thickness that’s not too thin but not too thick. Pound the thicker side not the skinnier end. Delicious.

Pounding them breaks down the fibres and tenderises them.
