I blend caramelized onions with tofutti sour cream, a tsp of raw tahini and umami spice.

-edited to add I caramelize the onions. I also like to use shallots if available

Umami is an additional "taste" that was *discovered* relatively recently in addition to sweet, sour, bitter and salty. It is an undertone of flavor - mushrooms are said to have umami and give umami flavor to a dish.

There are spice blends that are called umami but more typically recipes use ingredients that actually have umami.

Regarding onion dip without mayo, real onion dip is typically made with sour cream so one could use pareve sour cream or maybe even yogurt.

The 1950's recipe is Lipton's Onion Soup Mix added to sour cream.

Upscale recipes use fresh onions that are caramelized - cooked at a low temperature for a long period of time until they practically melt.

4 large onions

8 cloves garlic

½ c oil

2 tsp salt

Pepper to taste

Paprika to taste



Cut onions and peel garlic. Add oil and spices and mix. Spread into 2- 9x13 pans.

Cover and bake 450 for 1 hour and 350 until creamy (about 1 ½ hours). Let cool and blend

*freezes well

Yes. I use the TJs one. I think whole foods and ShopRite also have a version. You can also leave it out. It's not critical.
