No double coating no potato chips
Eggs first and then a coating
OR a one bowl recipe with oil and coating at same time.
I usually use ground almonds with spices.
Any other variations to make this better ?

Toast the ground almonds for just a bit before and use homemade natural mayo to dip the chicken into before coating with almonds.

If you can make or buy duck sauce, just use egg and almond and fry, then serve with the sauce either added before warming gently in the oven, or available on the side.

I bought panko crumb mix (lieber's no gebrokts) and it was delicious.
I put in a zip lock bag cutlets, spices, oil, an egg and a couple of Tbsp of potato starch.
Mixed everything then added crumbs and shook the bag. Then I fried.
It was super delicious ! And no mess

Matza meal,or potato starch, or the two combined.
Judging by the amount of honey, with badatz hashgacha, sold in my local shops, plenty of people do use use honey on Pesach.

"healthy"? Don't coat at all, that's "healthiest". Make stir fry with many veggies.

Healthy and schnitzel doesn't fit into the same sentence as it's fried in lots of oil.
A one bowl with oil AND coating simply doesn't exist.
Do stir fry for a healthier option.

Almond is very high in calories, about 600 cal per 100g. Much more than matzo meal or breadcrumbs.
Plus fried will be high in calories too.

Op your options are potato starch, ground nuts, or a combination. It’s healthier than bread crumbs
