I'm trying very hard to avoid any form of sweetener other than fruit, so no honey, maple syrup, fake sugar, etc-which really means no cake, but I would really like to have a piece of cake or muffin on Shabbos-are there any good recipes with whole wheat flour/oatmeal, eggs are fine, cocoa powder, maybe fruit add ins like blueberry or apple, but without oil or sugar? Maybe with bananas and dates as part of the base to make it sweet?

I love baked apples. Or u could do an Apple crisp

Chop apples, can add pears blueberries peaches too. Sprinkle cinnamon and pour in water to cover the bottom layer of fruit.
I usually do a topping with oats, flour, oil and sugar but u could use coconut sugar. If you want to avoid this you could just combine the oats with some oil and sprinkle it on top of the fruit. Should be delicious.
Cook on 350 for 45 mins or when top is getting browned

Agave syrup is does not cause an insulin spike. You can use it to bake, 1 for one, instead of sugar.

I've made this one. Does have a very minimal amount of sugar and oil. You can probably just leave it out and it would still be good.
