Married k"h with a family. our second pesach making alone. Last year we starved. My family uses everything. My husbands alot less. This year my husband said he doesn't care about minhagim we should make our own. Based on what works for me. It doesn't mean I will be eating klp pizza just food to give more breathing room I found out very late my plans. It felt so overwhelmed b"h we just kashered and I put together a chomitz free shabbos. Now I need pesach. I need mains and sides and what to eat between meals
I have the very basics potatoes, sweet potatoes, carrots, Squash. Onions. basic spices, dairy and nuts. Potatoes starch, sugar. Eggs Help me with food recipe, menus and grocery list.

This is same as us, I hv a varied huge menu.
Tons of meats use basics for sauce.
Smashed potatoes
Roasted potatoes
Meatballs in gravy
Potatoes meat blintz in onion sauce
Grilled meat/chicken salad
Fresh salads
Roast vegetables on 400 with oil & spices

I make salads that are meant to be refrigerated such as cole slaw, potato salad, cucumber salad, tomato salad, shredded carrots salad, beet salad...whichever type your family likes. You can usually use year round recipes and just substitute lemon juice for vinegar. They're good for during and between meals.
Fruits and nuts are great for snacking.
We don't eat gebrocks. I make lots of homemade crackers (or you can buy some if you're buying products this year). You can eat them with cream cheese, jelly, tuna, egg salad, eggs and onions, avocado, dips...

Roast vegetables as sautéed vegetable need to be eaten fresh or they are limp

So I really cook my squash , onions and carrots . But I said sauté . Basically I let it sauté , season with spices and cover on low heat until it becomes soft. That’s how we like it . I slice the zuchinni and carrots into into circles , and thinly slice onions . The zuchinni and onion release it’s juices and the veggies cook in that juice.
Chicken in wine is basically done on the stove top in a pot or pan . Sauté onions first circle sliced. If you use garlic add garlic cloves sliced and sauté .
Then season chicken legs to your taste.at over onions skin side down and let it get some color . Then turn over let it sauté /cook on the bed of onions . Add some cooking wine (I use Kedem sherry wine or Kedem cooking wine. Or you can be fancy and use food wine) cover and simmer on low flame . You can turn the chicken over after 45 min so the other side gets some coloring . When wine starts cooking out add some more . It will keep reducing . By the time your chicken is fully cooked allow the wine to fully reduce so there is literally no liquid left .
If you use pastrami, I have a scalloped potatoe and pastrami recipe that I like

I make pesach crackers. With potato starch. Salt. Sugar. Oil. Eggs.
And I make a delicious mock liver.
1 sautéed onion.
6 hard boiled eggs.
1 cup of ground walnuts.
Put it all in the food processor and blend it.
It’s delicious and my family loves it for a snack

If you don’t use pastrami. You can make it without the pastrami. Still delicious.

Whenever I make chicken soup I take the veggies out and mash it. I also add shredded chicken that has cooked in the soup. I thicken it up with a little potato starch and fill blintzes with it.
I serve it as either an appetizer or a side dish and my family loves it. They request it year round

Two delicious vegetables kugel recipes:
Kishka Kugel
First Layer
2 large carrots
1 large potato
1 onion
1 celery stalk or piece of knob celery (optional)
1/cup oil
1 teaspoon salt
Dash black pepper
Blend in a food processor.
Then add 3/4 cup potatoes starch.
Pour in a 9×13 and bake on 350° for half an hour.
Second Layer
2 pounds zucchini (about 2 medium zucchinis)
Cook the zucchini, drain and mash.
In a bowl mix:
2 tablespoons mayo
3 eggs
Salt and pepper
Add the mashed zuchinni.
Pour over the first layer and bake on 375° for 45 min.
Yerushalmi Kugel
1 large spaghetti squash
Cut in half, bake facing up on 375° for 1 hour. The shred it with a fork.
Brown 1/2 cup sugar and 1/2 cup oil. (My SIL says she likes putting less sugar and oil, so maybe try 1/3 cup.)
Mix:
5 eggs
1.5 cups sugar
1 tablespoon salt
1 tablespoon black pepper
Add the browned sugar and squash.
Pour into 9×13. Bake on 350° for one hour.
(It might look like it has a lot of extra liquid, but once it's baked it'll be good.)

Shepherds pie
Browned ground meat sautéed with onions salt and pepper, that's bottom layer.
Top layer mashed potatoes with sautéed onions in it, salt and pepper.
Bake.
Sautéed liver, Chopped liver, liver blintzes, potato blintzes, chicken n veggie blintzes. ( shred soup chicken sautéed with onion, carrots and zucchini salt and pepper. )
Taco meat, Browned ground beef with onion salt and pepper, put into blintz or eat with matzah or on top of salad.

Yerushalmi kugel is meant to be spicy, not sweet

Based on another yerushalmi spaghetti squash kugels I've seen, the correct recipe likely has 1/2 cup sugar in the 2nd part.

I added a beaten egg in both layers of shepherds pie
Orange juice, grapefruit juice, lemonade.
Squeezed orange juice and lemon juice I also use to dress chicken, meat, fish, Salads.
For meats I use for dressing, wine, and also grated marror
Grated veg soup, low carb cream of chicken zucchini soup, butternut veg soup.
Sautéed chicken cubes with carrots and zucchini
Chicken roll ups stuffed with sweet potato inside
Sweet carrots
Sweet glazed carrots with pineapple
Apple fruit salad with nut crunch and kiwi sauce
Potato latkes with raw potatoes or cooked potatoes
Potato and sweet potato fries
Sliced Potato and sweet potato sautéed with onions
Sautéed zucchini cubes with onions and beaten egg.
Tropical grilled chicken cutlet salad. Romaine, mango, pineapple, pom, kiwi. Dress with orange juice, lemon juice, sugar.
Baked salmon with tropical salsa.
