I'm making pea soup and I have to soak the peas overnight. Tomorrow morn. should I use the water the peas soaked in, or drain the water (inevitably getting half the peas in the sink) and start again?

Not a big deal, I've just been thinking about it. Oh, and I did rinse the peas prior.

when I used to make pea and bean soups and they needed soaking - as long as the water was clean , then I would use it in the soup to ensure no vitamins were lost at all - don't know if any nutritional value is lost by soaking, but I still did it - still do it when soaking grains too

although I've heard that the soup will be less 'gassy" or gas producing if you rinse the peas and use new water for the soup. I've heard the same thing about all lentils, beans for cholent etc...
