I am looking for a soup recipe that will use up my mushrooms and onions. Dairy or Pareve.

Do you have the purple Spice and Spirit cookbook? There's a great mushroom barley soup in there that uses mushrooms and onions. Ask your LOR about using sherry during the 9 days. You may want to skip it altogether.

I have a great dairy onion soup recipe. Mushrooms: you can make anything, rice in the oven, orzo with sauteed veggies. I can always use mushrooms. Or you can sautee onions and mushrooms with rice or farfel. If you make beurekas, I have a great mushroom sauce iwth onions also recipe: Delish.

I was going to suggest that same soup before I realized you did! It's delicious even without the sherry.

I made a mushroom barley soup whose recipe doesn't involve sherry at all.
You take 4 carrots, 2 celery stalks, and a large onion and shred them in the food processor.
Put the vegi-mush in a pot. Then add a cup of barley and 12 cups of water.
Add a package of onion soup mix to the pot along with 2 tsps. of salt.
Slice up a containers worth of mushrooms and add to pot.
You can also add fresh parsley and dill to the pot, if you like it.
Cook on a low flame for 2 hours.
We had some yesterday, and it was delicious! (guess what I'm having for lunch  )
