Just made apple turnovers,
Do I need to put them in the fridge? Will they stay fresh if I leave them out?

I'd freeze them and take out from the freezer when needed.

The dough may get soggy in the refrigerator. If freezing is not an option, I'd leave it out in an airtight container.

Neither, I'm coming over to eat them now! They really are best fresh which is why I try to do it last minute with the challah, not great for my mood but amazing dessert for RH.
To answer your question, I would put in an airtight container like tupperware and leave out but eat within 24 hours. So serve it for tonight. If Im too late then ok.
