I normally use chicken bones but I ran out.
I make a relatively small soup. Last week I put 1 bottom and it was not so flavorful.
what is the ratio of medium sized bottoms (thigh and leg) per cups of water?

I put in 2 bottoms usually and pipicks. And I leave it cooking for 2 days if possible.
The flavor is crazy BH

I put 4 thighs and 1 package of pupiks and I don’t let it cook as long :-) I put it up in the morning and leave it on simmer all day.

What else did you put in besides the chicken, and how long did you cook it for?
In a smaller pot (like 4-6 quarts), it can be enough, IF you also put in an assortment of vegetables to strengthen the flavor (I do zucchini, sweet potato, parsnip, carrots, celery, garlic, dill, and ginger (small piece - I put the chicken, dill, and ginger in a net bag)) AND you cook it for a sufficient amount of time (I would say at least 4 hours of simmering).

I use 2 chicken bottoms in a 12qt pot. I leave it on a simmer overnight and it is delicious. I add the soup greens from the pack, plus 2 zucchini, and 7-9 large carrots.
