Getting loads of guest for Yom Tov

So we’re getting lots of guest for Yom Tov IYH and I’m beginning to stress about the food situation (specifically cooking the food) meats etc.

Yet, I haven’t done a thing and I feel frozen.

Too lazy? Too stressed? Too old? Not sure!

Help!

As someone who hosts alot of guests, you need to start by making a list and a menu.

Once you have that, you can start by getting a few things every day and it feels amazing to check things off.

I second that. I write down all the sudas including shabbos then write a menu for each day. On another paper I write all that I need to make and On another page I write the shopping list.

Today is only Tuesday so if you cook everyday 3 or 4 things you will be fine and there is also after shabbos and Sunday to cook.

Are you getting loads for R"H, Sukkos, or both?

If only sukkos - it's still early, but start with the menu planning now.

If RH, make a menu immediately and start stat.

If both, make the menu for R"H and Sukkos similar, so if you make potato kugel for R"H, you can double or triple the recipe and make for sukkos too. Works with soups, kugels, knishes, desserts, etc.

Super easy menu

Salmon -buy it sliced- pour a bunch of spices, oil, bake 450 12-15 minutes
Serve on a bed of red cabbage mixed with mayo and salt
If you want fancy sprinkle some pomegranate seeds

Salmon teriyaki is super easy and you can plate it on top of ramen noodles - once the noodles are cooked sautée it quickly with the seasoning packet and a tiny bit of sesame oil if you have, if not skip

Big low and slow roast - Or bone in chicken pieces- salt, pepper, any spices, a bottle of any dressing foil tightly
Bake 325- 45 min per lb. For chicken pieces check after 1.5 hrs

Roasted frozen broccoli with just salt and pepper

Roasted frozen cauliflower 3 ways, tumeric, smoked paprika, zaatar if you have or plain (salt and pepper) is fine also good

Spread on a parchment cookie sheet
Season, ROAST at 450

Then make a pot of rice -
I learned a trick to get crispy top rice
Spray a round pan with BAKING SPRAY- the kind that has flour- Pat down rice and put on the blech for about 1.5 hrs
When you a ready to serve flip over on to plate
You’ll have to experiment how crunchy you like it, without burning
But the secret is BAKING SPRAY

But plain rice is nice also

Pre-cook/bake a lot of food and freeze it. Warm it up right before serving so it's not as stressful to be preparing most of your meals right before yuntif begins.
