I have a lot of fresh baby spinach leaves that I would like to use up - ideally in a salad. I also happen to have a leftover pomegranate that can be thrown in Smile. Does anyone have any easy but yummy recipes (with basic ingredients).

TIA!

The baby spinach is really good in a cheese sandwich made in sandwich maker or panini press. Put more than you think you'll want, because it shrinks down.

Baby spinach, mandarin oranges, feta cheese , red onion and slivered almonds with balsamic vinaigrette... Delicious salad! You can sub pomegranate seeds for the mandarin oranges, I'm sure that would taste great too
