I have a lot of fresh baby spinach leaves that I would like to use up - ideally in a salad. I also happen to have a leftover pomegranate that can be thrown in . Does anyone have any easy but yummy recipes (with basic ingredients).

The baby spinach is really good in a cheese sandwich made in sandwich maker or panini press. Put more than you think you'll want, because it shrinks down.

Baby spinach, mandarin oranges, feta cheese , red onion and slivered almonds with balsamic vinaigrette... Delicious salad! You can sub pomegranate seeds for the mandarin oranges, I'm sure that would taste great too

Spinach, pomegranate, mandarin oranges and avacado slices. Cut a few small pieces of red onion ( optional) add 2 Tb brown sugar, 1/4 cup balsamic or red wine vinegar, some salt and pepper and 1/2 cup oil ( or half oil and half water)Mix dressing and pour some over salad
