I had an amazing dish over rice- there was celery, squash, potatoes, zucchini and carrots in a tomato sauce, served over rice. Like ratatouille kind of, but lighter on the tomato. Any names or recipe ideas pls?

Khoresh is the general term for stews. Actual names depends on what you use as ingredients, like khoresh banjan if you use aubergine, khoresh bamija if you use okra, etc.
