Meat mixture:
2-3 onions, sliced
2 lbs ground beef (pareve is okay too)
16 oz canned tomato sauce, any kind
cumin, pepper, chili powder (optional) to taste, start with 2 tsp of each
jar diced diced black olives
1-2 cups corn, canned, fresh or frozen
shredded cheese, pareve or dairy
Sautee the onions and add your meat and let it brown. Add your tomato sauce and spices and let simmer about 15-20 minutes.
Add your corn and the olives. Put in 9 by 13 pan (deep is best), place your shredded cheese on top if using, and top with your cornbread mixture, below.
Mix your cornbread:
1 cup cornmeal
1 cup flour
4 T sugar
1 T baking powder
1/2 tsp salt
2 egs
1 cup soymilk
4 T melted fat
Mix your dry ingredients with the wet. Pour over meat and bake at 425 for 15-18 minutes.
Serve with tomatoes, sour cream (pareve or dairy), diced onions, shredded lettuce, whatever you'd use in a real taco!
Freezes well!

I like to use the word fat for butter or marg or Crisco. That way I don't have to list all the possibilities in the instructions.

sounds good. what do you usually do cm? Make it with real meat and fake cheese or fake meat and real cheese?

I would make it & leave out parev cheese. I don't like parev cheese or parev meat.

I use soy crumbles and fake meat such as Gimmee Lean almost daily. I like Gimmee Lean b/c it's fat free and tastes great.
This week I made burritos and spaghetti with fake meatsauce with the crumbles.

I can't remember the name, but it comes in a smallish package and it's located in the produce section of the supermarket. I think it's made by the same company as Gimmee Lean.
I used to always buy Morningstar Farms sausage crumbles, but they're dairy, and are higher in calories and fat.
