I always bake never boil. I cant stand the smell. I usually put in onions a bit of sugar, a splash of water, cover and cook for an 1.5 hours. Or I pour crushed tomatoes over and cover and cook

okay, just to be clear.....
if you put it in the oven, still wrapped, w/ water and whatever u would normally add when doing on stove, then 2 hours is right. (just a note-the carrots dont cook this way-I dont know why).
if you want to pour a sauce on it, then unwrap the fish, pour sauce and bake 2 hours.
plain-not sure how that would work.

I unwrap, sprinkle top with sugar and paprika, and bake until brown on top, maybe 1.5 hrs?

I ALWAYS bake my gefilte fish frozen loaves. I usualy put olive oil around it, throw paprika and sometimes breadcrumbs.
I put oven on 350 and bake uncovered for about an hour. Maybe my oven is hotter but 2 hours would burn it to pieces for me. I guess one needs to check on it and time according to your oven?
Its so much better baked I find. Then since it has breadcrumbs around it, it looks like it has a crust when its cut into pieces, tastes so much yummier I think.

I always bake. I defrost the loaf for a bit, then unwrap it. I make half a cup (b'erech) of oil with sugar and paprika, put some on the bottom of the pan, put the fish in, pour the rest over it. bake coverd 1 1/2. for some reason the carrots and onions don't come out this way.

I love to bake the roll, becuase the flavor doesnt get cooked out into the water. also, its so much easier and neater.
