This got rave reviews last Shabbos!
Chicken pieces (I used boneless, skinless chicken thighs)
1/4 cup balsamic vinegar (Bartenura is the best)
2 cubes frozen basil (we use Toppits, which has a hechsher)
1 clove garlic, chopped
2 tbsp olive oil
1 lb frozen spinach
5 Kalamata olives
5 chopped up sundried tomatoes
Combine vinegar, basil, garlic and olive oil. Toss chicken in the sauce, pour out into baking dish. Sprinkle the sundried tomatoes and olives over the chicken. Place the spinach in the baking dish as well. Half way through the baking, mix the spinach with the sauce/juices a little. Cooking time will depend on type of chicken used - I cook thawed thighs at 385 degrees for around 45 min. Goes well with rice.

I have some Kedem balsamic vinegar; we never liked it and I know it's expensive. any takers?

Thank you; I made it for Friday night dinner, both me and my husband loved it. Its a great way to make spinach; I might add more spinach next time. I used thighs with bone in them.
