at what temperature should the oven be set when a recipe says to roast the chicken?
450?
This recipe said roast uncovered for 60 mins, then lower to 275 until done. Does that sounds about right?

450 sounds high.
I roast it at 375-400 and after an hour I turn the chicken and roast on 375 for another hour. Uncovered.
Comes out perfect every time.
I also cut up potatoes and put them around the chicken. (I love one pot meals ) Just a tip.

I bake any kind of chicken at 400. Sometimes I leave it uncovered 1/2 the time & 1/2 covered.

Slow roasting (covered) for 5-6 hours at 250 will yield a VERY tender bird, and is great if you want to just forget about it for a few hours.
High-heat roasting for an hour and a quarter at 450 will also work if you're in a hurry, just be sure to stuff the chicken cavity with onion, some margarine, and any other spices or vegetables you like, and baste the bird every 20 minutes or so, turning it over halfway through!
