Mock Shrimp in Cabbage Salad
from Oxygen magazine

Salad:
flaked or cut up pkge of mock shrimp, or half a package
baggy shredded cabbage
1 lb cherry or grape tomatoes, halved; or a regular cut up tomato
4 scallions, cut up
quarter cup pumpkin seeds

Dressing:
juice and zest of lemon
1 tsp mustard, any kind
2 T mayo
pinch of salt
bit of oil

Mix and serve cold.
