I have canned salmon, green peppers, onions, a few other things...

If you also have some mayo /cream/milk and osme pasta you can make a pretty yummy pasta sauce.

Salmon patties are always a big hit here. We fry them, but I know some people bake them.
You can pretty much use salmon any way that you'd use tuna. Salmon salad for a lighter meal, or salmon quiche, or salmon noodle casserole...

1 big can salmon + 1 egg + bread crumbs + finely chopped onion.
I make patties on a baking sheet with oil but u can also fry them.
You can also make it in a loaf like meatloaf, in which case u might want to add a little milk or soymilk but u don't have too. I think the patties come out better though.

You can make salmon and mayo (like tuna) and serve with salad and pitta/ bread its yum!
salmon patties fried with egg, matzo meal, ketchup and a bit grated onion also great.
salmon in pastry, mix salmon, grated onion, egg, matzo meal and spices and line on a rolled out rectangle of puff pastry, bake till brown.
