ISO Pepper Salad Recipe (not cooked)

Anyone have a recipe for pepper salad? Not something cooked. Tri-color peppers with a dressing. I can have other veggies as well.

marinated salad:
1 red pepper
1 green pepper
1 english cucumber
1 red onion
1 can baby corn

dressing:
3 tsp salt
1/3 water
1/3 sugar
1/3 cup vinegar
1 tbsp oil
Bring ingredients to a boil in a small pot
slice up all the vegetables and and pour the dressing over

Tri color pepper asparagus salad

4 portobello mushrooms

1 bunch asparagus

1 red pepper

1 yellow pepper

1 orange pepper



Dressing:

1 cup olive oil (⅓ cup)

¾ cup vinegar (¼ cup)

5 tbsp sugar (1 tbsp)

1 tbsp salt (easy)

1 tsp pepper

1 clove of garlic crushed


Place the mushrooms and asparagus on a cookie sheet. Sprinkle with salt and pepper and grill for 5 to 7 minutes.

Slice the peppers and grilled mushrooms and asparagus into a bowl.

In another bowl mix together dressing ingredients.

Pour dressing over salad.

This is a great layered salad that is always a great hit.

Layered Pepper Salad

1 green pepper, diced
1 red pepper, diced
1 orange/yellow pepper, diced
1 box cherry tomatoes, sliced
½ pkg purple cabbage, diced
Candied almonds, crushed

Dressing:
½ cup oil
¼ cup vinegar
¼ cup sugar
¼ cup ketchup
½ tsp pepper
1 garlic clove, crushed
½ tsp salt

1. Mix dressing ingredients in a jar.
2. Layer vegetables in small-med bowl, with nuts on top.
3. Cover with dressing and toss.

I'm not home now so I don't have the exact proportions. I think you can play with it a bit. It was from an old Reader's Digest

Something like

1/3 c. olive oil (I cut it with water)
2 Tbsp. cider vinegar
cayenne pepper, salt, pepper, paprika, garlic

Pour marinade over cut up peppers, tomatoes, onions.
