I'm looking for a good sole recipe. It can be served hot or cold but prefer some sort of sauce if it needs to be hot since I'll be cooking it at home and then reheating at mil's.
Preferably no frying recipes

I've eaten out by people who make stuffed sole - with a rice filling and then the sole fillets wrapped around it and secured with toothpicks. You bake it in a savory tomatoey type of sauce. It's yummy!! I don't have an exact recipe, but maybe someone here does...

Once I dipped the sole in pasta sauce, rolled it up and secured it with toothpicks. I may have poured more sauce into the pan. I baked it and then kept it warm on the plata (hot plate) for the friday night seudah

You can cook/bake sole with tomato sauce. Can be served warm or cold. I personally like it a bit spicy with harissa, and chopped cilantro leaves.
Another way is oriental ones. You can steam them with julienned fresh ginger roots and scalion, serve with other steamed or stir-fried vegetables. Or cut the fish into small pieces, coat with corn starch and stir-fry with rice wine and soy sauce.
