Fish cakes (with Panko)
1 lb fish, frozen is OK
1 T mayo
parsley to taste, unless you are using flavored Panko
1 egg, beaten
1 T mustard, any kind
1 T lemon (1/2 lemon squeezed)
3/4 cup Panko, flavored if possible; extra for rolling
3 minced scallions
black pepper to taste
1/4 cup oil
You steam for fish for about 10 minutes then let cool. Flake in bowl with ingredients & and shape into cakes. Pat extra Panko onto the fish cake. Heat the oil and place fish cakes in it, and cook for about 3 minutes, or until crisp. Flip and recook the other side.
Serve with tarter sauce. Mmmm
