...when you cook gefilte fish, how do you cool it? With or without the water? I tried both and my DH claims that with the water makes it too watery, but I rather like the texture.

Guess you should chop the loaf in half, then. So each of you can have what you want.

I for sure let it cool with the water. It's called fish sauce. When storing in the fridge I put in a lot of sauce too and serve with some in the plate. I put in pike skin when cooking so the water becomes a bit jellyish.

I prefer a more firm loaf and remove the loaf from the water once it's cooked.

most improtant- take paper off right away or it looks bumpy and you lose a lot of fish. and I drain it, or I find it gets smelly... Confused

Thanks gdgirl, I'm going to take off the paper right now. And I forgot to put spices and sugar in my fish this week Sad

I take it off an hour into the cooking.

If you forgot to add seasonings to the pot, place the sugar and salt in the cooking liquid now and leave the loaf in the water.
(Most loaf's are well seasoned anyway and it should be good even without this.)

My FIL likes the fish very dry si MIL wraps it in paper towel once it cools. I just remove wrapper oncefish cools and then let sit another hour so water leaks out. Then I drain it and put away.

I also make difft recipes with sauces or I add cooked veggies to the raw loaf and bake with no liquid which is dry.
