I don't know about food in Seattle,but Vancouver definitely has cholov yisroel & meat dining in options.

Niagara Falls is scenic, has a ton of stuff to do there, activities are relatively cheap and there’s a meat & dairy restaurant plus Chabad for Shabbos. Then Toronto is an hour away with lots more kosher food.
Niagara on the Lake is a historic town nearby that I’ve heard is work exploring too.
(I was recently at Niagara but only heard of the historic town after I got back)

Denver Colorado had kosher food and beautiful mountains

If we're including Canada already - aside from Niagara falls, there's also lots of lakes which can be scenic if your into water. Lake Ontario - centre island is a nice day trip from Toronto. Also close to Toronto is Innisfil which is on lake Simcoe. You can probably get an air bnb there. The grocery store there actually started carrying some take out and kosher chicken! This is breaking news BTW, just started this season! There's also Victoria lake which is kinda like a bungalow colony I think. Wasaga beach is beautiful, but a bit further from the city.

Near Montreal there is trout lake- mountains and lake etc.

I'm thikimg to do Niagara. Is birth certificate enough if I want to fly to Buffalo and then drive to Niagara?
