1 box linguine, boiled and strained
1/2-1 bag of frozen sugar snap peas, (defrosted is quicker!!)
1 lg. onion, sliced
1 red pepper, sliced
Dressing:
1/2 c. soy sauce
1/4 c. oil
1/2 c. sugar
few drops toasted sesame oil, optional
fry onions until translucent. Add snap peas and peppers. Combine with linguine. Mix dressing ingredients and pour over pasta.
Best when cold IMO. My brother likes it hot. To each, his own! |
Thanks for that!!!

Pasta Salads were split from the Veg/Rice/Bean Salad thread.
Here are the pasta salads that were taken out of posts (that had veg. salad recipes):
[quote="CS"]Pasta with Garlic Dressing
Cook very thin spaghetti.
Dressing:
¼ cup olive oil
¼ cup soy sauce
4-5 cloves of crushed garlic
Lightly toast garlic until almost brown in olive oil. Add soy sauce into pan and immediately pour over warm pasta. You can add pepper and green onions to mixture. This salad tastes delicious either hot or cold and for some reason, kids love it.
------------------------------------------------------------------------------
Pasta with Peanut Dressing
Cook very thin spaghetti.
Dressing:
6 Tbsp unsalted peanuts
2 tsp minced gingerroot or ¼ tsp ground ginger
4 Tbsp lemon juice
2 Tbsp soy sauce
2 Tbsp honey
8 tsp vegetable oil
1 Tbsp sesame oil
2 tsp crushed garlic
4 Tbsp water
In food processor, combine all ingredients and puree until smooth. Toss dressing over pasta, add chopped green onions.
You can add slices of cooked lean beef or chicken to salad if you wish.

Try this delicious pasta recipe
I box angel hair spaghetti
3 carrots grated or diced into small pieces
bunch of scallions sliced small
1/2 cup oil
1/2 cup soy sauce
1/2 cup sugar
throw a handful or two of sesame seeds on top.
p.s. this recipe makes a large quantity - I got it from a friend who caters for her Chabad House in New Jersey. when my guest list is not so long I cut all ingredients in half
Enjoy!!! let me know if any was left over

16 oz pasta - bow ties, rotini, ziti or other small to medium shape pasta noodle
1 bag (16 oz) frozen veggies - broccoli, cauliflower and carrots work well
1 cup Italian or other salad dressing
cut up shallots (approx half a cunch)
1 cup olives, cut into halves or thirds - green or black
Boil your noodles and drain and put into bowl. Steam veggies (optional, I don't), and add to bowl with pasta. Add the remaining ingredients and chill until serving. Makes about 8 servings.

Both sound good. My kids only eat my boring one - mayo, salt, garlic powder, but maybe I'll try one of these when we have guests & still make the kids theirs.

I despise frozen ‘mixed vegetables’. It reminds me of vomit (sorry!). can I do this with fresh veggies? I love the olives idea.

I use the tri-collored pasta made (from brown rice flower), and here's what I add for one pkg of pasta.
One red pepper, diced
One orange pepper, diced
One green or yellow pepper, diced
olives with pimentoes, sliced
scalions
Optional:
hearts of palm
diced avocado
diced tomato
Dressing:
Italian, or
extra light olive oil, fresh garlic, little salt, pepper, and depending on the day fresh dill.

Hey Motek - well I just do everything by sight with this salad. It looks nice with a little of each color of veggie so try 1/4 c of each mixed with a whole box of pasta. Add more if you want it more vegetably. Same with the sauce. just start with 1/4c of each and add more till you have it dressed to your liking!
