I'm actually inspired this week because IY"H we're having a nice amount of guests

Some other quick dessert, my kokosh dough fermented because I left it out overnight. oops!

Friday nite:
Salads (humus, techina, egg salad, avocado salad, chickpeas, roasted chatzilim, cut veg, lettuce, soy beans) with sweet challah
Sweet potato soup
chicken breasts cut up as schnitzl in sauce
Rice with dried cranberries
buckwheat cake with vanilla topping and melted chocolate over it (guests...)
buckwheat crumb cake with cinnamon topping
fruit
tea
Shabbos lunch:
Salads (like Friday nite) with regular challah and yerushalmi pitot as the second lechem mishneh
meat cholent with kishke (only potatoes, onions, carrots and barley, no beans)
potato kugel
potato knishes
fruit
tea
leftover cake from friday nite
As I am temporarily off gluten, fats, dairy, meat, chicken, fish, citrus, vinegar, mushrooms, etc. this gives me what to eat along with everyone else. In fact, with all the salads including soy beans which give me protein, and as it isn't like kashrus I can eat the veg out of the cholent, it's not that I'm veggie, it's for my sinuses (and it works!) and the buckwheat cake is made without fat and without gluten so I just don't eat the topping (the kids love the fact that I will eat their cake and they get my topping) we are all happy.
And for those of you who want organic, except for the cake topping (the pudding and chocolate narishkeit) it can all be made organic. In fact this week most of it actually is! Again, seems to work best for people with pesticide sensitivity which they think may have been a cause of my chronic sinus problems so we are now trying organic along with the non whatever diet. When it stops working I will go out and have a steak bepita...

Okay, we are having (sleepover) company as well as guests for Shabbos lunch, so here goes:
Fri. night:
challah (bought) with homemade dips (olive, tomato)
Gefilte fish
Chicken soup w/ knaidlach
corned beef with tangy mustard glaze
chicken (snack cracker or duck sauce)
quinoa with vegetables (from Pereg mix)
potato kugel
ratatouille
coconut cream pie (request from DS for his siyyum)
cookies from freezer (reverse chocolate chip)
Shabbos lunch:
challah with dips
gefilte fish
Moroccan beet salad
avocado/corn salad
purple cabbage salad w/ mandarin oranges, glazed nuts and craisins
sweet challah kugel
pumpkin cranberry muffins
maybe one other kugel (broccoli?)
cholent
hush puppy chicken
fruit (guest is bringing)
cherry chocolate cake w/ walnuts
I am tired.

This is the last shabbos I'm going to have guests before I have my baby (within 3-4 weeks, G-d willing). I'm just too tired to keep doing it. Last night I spent a bunch of time cooking because we were supposed to have guests coming to spend all of shabbos with us from out of town, but they called us at 10pm to inform us that they're just going to drive up on Shabbos day (obviously not frummies). So, I had made a bunch of food and was so tired...
Anyway, here are the menus:
Gefilte fish
Homemade olive paste, babaganoush, hummus
Challah
Salad
Hot & Sour Soup
Teryaki chicken with sesame seeds
Roasted mixed veggies
Basmati Rice
Dessert:
No idea...I made brownies, but DH and I kind of polished off half the pan last night. Oops!
Lunch:
Gefile fish
Homemade olive paste, babaganoush, hummus
Challah
Edamame Salad with mixed peppers
Deli Roll
Leftover teryaki chicken
Basmati Rice
Leftover roasted vegetables (I made a tonne)
Green Salad

PINEAPPLE, here's the crispy chicken recipe. so easy and so yum.
I use chicken on the bone, but it can be made with cutlets too.
skin the chickens, then smear with a thin coat of mayo.
mix together cornflake crumbs with paprika, garlic, onion, black pepper, and a little consoumme, and any other spice you want. if you taste the crumb mixture, it should taste a tad too spicy, it'll weaken a little when cooking. make sure you put in enough paprika so that it'll turn golden.
pour the crumb mixture over the chicken, and make sure to pour some in the corners of the pan! I always find my dh in the kitchen after the meal eating the crumbs from the bottom of the pan lol.
pour a TINY drop of olive oil in the four corners of the pan.
cover tightly and bake one hour, then uncover and bake another hour.

Cut up onions in small pieces, slice mushrooms thinly. Saute in olive oil until tender. Then toss the potatoes with the onion/mushrooms. Season with salt pepper etc.
Bake in a roasting pan at 425 degrees until tender.
At times when I been lazy, I will dice onions and toss with potatoes and oil un-sauted and baked as above.

It's called Lebanese chick pea salad. It's in the new Kosher by Design. If anyone is motivated to post it. please do. If not I will, but not right now.
