if you want to ensure that your gefilte fish doesnt fall apart while boiling, what do you make sure to add enough of? Egg? Matza meal? Flour? Which ingredient is the one that holds it all together?

eggs.I also found that when I use matzah meal(which I dont anymore)I needs to be very fine.the right measurement of water that it boils in I think makes a difference,but since I make only loaves dont take my word on it.
I remember it was on here,search for gefilte fish.choc moose had the best one that I tried.the trick for fluffy was eggs

seraph why dont you try making loaves and cooking it in the oven? I boiled my gefilte fish for years and could never get it right...sometimes it was raw, sometimes it blew up and was full of water and disgusting...
now I just take the frozen loaf and bake it at 325....makes my life so much easier....
