Does anyone have a good recipe for fish-based soup?
I found a tub of frozen fish stock in my freezer and don't know what to do with this.
We don't do fish/milk mix, so would appreciate a parve one pleeease.

I had a Fish soup at a milchig restaurant and thay called it Manhattan Chowder. It was a tomato base with chunks of fish and large pieces of vegetables. To be honest I thought it was kind of gross. (NOt that it stopped me from finishing the entire bowl, I was starving!) Real Fish Chowder (treif) calls for clams, shrimp, etc in a heavy a cream base... Good luck, let me know if you hunt down adecent recipe, I will try almost anything... at least--ONCE!!

This is a soup I had at my mother-in-law's table. She's not that great with measurements, so I'll give you guidelines. If you ask her "how much onion?" she says, "You know. To taste."

8 cups fish stock
chopped medium onion
2 - 3 cups diced tomato
chopped shallots or garlic
chopped Italian parsley
small amount orange zest
1 cup pastina (tiny star pasta)
Tsp Olive Oil
2 lbs of white fish, cubed

Saute onion and shallot/garlic in olive oil. When they become translucent, add tomato. When the tomato starts to shed water, add stock, orange zest. Simmer. Add fish. 15 minutes before serving, you can add the pastina and parsley.

I love fish chowder! It is basically like a thick cream clam chowder but uses cod or haddock instead of clams. It is NOT traif as someone said, but I have only seen it in kosher restaurants in Boston.

I grew up eating fish chowder, but I grew up in Boston. I never heard of people who did not know about fish chowder. Of course the Catholics eat it all winter (the "frum" [l'havdil] ones eat only fish on Fridays) so they often alternate clam chowder and fish chowder on Fridays all winter long.

timeforsimcha,

Thanks very very much for the recipe. I tried it last night--it was a BIG hit.
DH loved it so much he's warming it today for lunch.
I modified a bit, scaled down to proportion, added chopped up courgettes,
skipped parsley and orange zest, but it was DELISH!! So easy to make
and was very filling because of pasta as well.

No fish/milk for us, though DH allows fish sauteed with butter.
One thing I really miss is tuna melt sandwich.

Oh yeah, the fish stuff on Friday. It has become sooo cultural that even in public schools here they use that day for the dreaded fish...
