Help me with my gluten free challah!

It tastes quite good but I’m looking for tips to get it fluffier and not so cakey. Any ideas? I baked it in the silicone challah mould

I warm my oven then shut off then put in the oven to rise (covered so it shouldnt dry out). I find gf dough needs a warm cozy place to rise
