Gluten free flour/ recipe help is it really 1:1

I'm looking at a recipe someone on imamother gave me for apple sauce cake. I need to make it in gluten free version , I have the Arthur 1:1 brand or Pillsbury flour gluten free options I could use. But is that all I need to do different ? Do I need to change the baking soda quantity or add xanthan gum (which I have) etc. Anyone familiar or experienced who can help out a new to the celiac scene here would be much appreciated thank you !
