Is it possible to freeze prepped raw potato?

Like homemade fries? Or baked potatoes?
If not, which potato dishes are ok? Are layered potatoes fine?
I know kugel isn’t a problem if put straight into the oven (correct me if I’m wrong)

Also texture isn’t really an issue just as long as it doesn’t come out too soggy

Yes. But realize that anything you make after ward will come out fall-off-your fork soft.

When they make frozen french fries, they dehydrate them first, and that makes all the difference

Raw potato put in the freezer, comes out brown and grainy. Really yucky. Been there done that. You can par-boil the potatoes and freeze once drained and dried.

This one kind of works surprisingly but it's not something we can eat every day. It's a mushy sauce covered potato and somehow works but it's not good looking though it tastes good.

Baked kugel can be frozen.
Put some water over it and cover tightly. Reheat on a low temp for a few hours. It ends up being similar to an overnight kugel. The longer it bakes the tastier it gets.

Baked kugel, cooked mashed potatoes aren’t what op asked. She asked about raw potatoes. Freezing raw potatoes in any form is a bad idea.
