I hate bumping into them. Why do sell them like this?

They're tendons, not veins.

Yes and it’s so annoying in dark chicken cutlet bec there’s so many
I used to buy from an expensive butcher and they always removed but they stopped removing and I can’t justify shopping by them anymore

Yes! I usually throw away 1/3 of the pack just from cleaning “clean” cutlets. Dark I don’t even bother, it’s impossible I just don’t buy them.

After they’re cooked, it’s hard to tell it apart from the meat

Yes dark chicken has tendons. Tendons don't cook out, they get tough and chewy when cooked.

It’s actually not so hard to take them out of the chicken breast - put the end of the tendon between two fork points and use a paper towel to grip the tendon so you can pull it through the fork (while the fork holds back the cutlet from sliding)
I hope I’m explaining this clearly lol
But if not, try googling it
For dark cutlets… yeah too many lol I wouldn’t bother trying!

Kitchen shears/poultry scissors make the removal of dark chicken tendons much easier.

What do you do when you buy ground chicken?! And there's that white thing all over the chicken?
